Gluten Free Dairy Free Mac 'n Cheese

So the hardest thing for Riley to miss out on with his "special" diet is the Mac 'n Cheese.
Quite a sad occasion when it's served (either here or other places) and there's just none for him.
But we HAVE tried...
about 5 recipes, to be exact!
But when you eliminate gluten, dairy, egg and a bunch more things it's kinda hard to have good Mac 'n Cheese! None of the recipes have been good. They're globby, gunky, gross and all around tasteless. Honestly, I've even tried some of them!

UNTIL!

I recently came across this recipe, and as a last ditch effort to find a good Mac 'n Cheese recipe, I made it. I'll admit, my hopes really weren't too high.

But it passed with FLYING colors! Second helpings! Third helpings! Yum! This is the best Mac 'n Cheese EVER!


So, in the even you've been searching for a delicious Gluten & Dairy Free Mac 'n Cheese...

Here goes!

The BEST GF/CF Macaroni & Cheese

8 ounces gluten-free or regular pasta, any shape
3 cups Daiya Cheddar style Shreds
3 tablespoons vegan butter
2 cups unsweetened (soy / rice) milk product
1 tablespoon nutritional yeast
¼ teaspoon black pepper
                   
Cook pasta according to package instructions. Drain thoroughly when done. Preheat oven to 350°F. Prepare the cheese sauce while oven is warming. In a small pot melt the butter. When melted, add the pepper and nutritional yeast.
Stir in the milk product. Add the cheddar, and cook over low/medium heat for about 2-3 minutes, stirring frequently to prevent burning. Stir in the macaroni and mix together.
Transfer to an 8x8 casserole dish. Bake for 15 minutes uncovered, or until the cheese is bubbling and top is starting to brown.

Serves 4
