Peanut Butter Banana Oatmeal Squares

Breakfast has a tendancy to get a little mundane around here... Riley can't have eggs or gluten so it greatly limits the choices. Thankfully, there are a few great GF cereals available, but like I said, cereal every day is a little b.o.r.i.n.g... so I've been on the hunt for recipes that can be easily converted to GF/EF and still taste "normal" to the rest of the crew. I made these Peanut Butter Banana Oatmeal Squares this morning and they were an out-of-the-park-home-run-hit!
ALL the children loved them and we'll have enough for tomorrow morning too! I served them warm, with a glass of milk this morning and guessing they'll be just fine either re-heated or cold.
I used an egg substitute, but here's the "normal" recipe!


Peanut Butter Banana Oatmeal Squares

3 cups quick cooking oats
1/2 cup packed light brown sugar
2 teaspoon baking powder
1 teaspoon salt
2 teaspoon cinnamon
2 teaspoon vanilla
1 cup milk
2 large eggs, lightly beaten
2 large mashed banana
1/2 cup creamy peanut butter

Mix together the quick cooking oats, light brown sugar, baking powder, salt and cinnamon.
Add in the vanilla, milk and egg. Mix the ingredients together.
Then add in the mashed banana and peanut butter. Combine all of the ingredients.
Pour the mixture into a lightly greased 9x13 baking pan. Bake at 350 F degrees for 20 minutes.
Cut into squares and enjoy!

Looks yummy! I found a recipe for breakfast cookies on Pinterest that only has no eggs or dairy in it. They are yum!
