So, thanks to Pinterest, I think I've just found another family favorite dinner....!

Introducing Super Chicken... (I'm not really sure of it's name)
Easiest dinner ever.

Salsa Cream Cheese Chicken
6-8 Boneless skinless chicken breasts or tenderloins
1 jar of salsa (we like mild)
1 pkg. of cream cheese
1 can of corn (drained)
1 can of black beans (drained)
Put it all in a crock pot for 3-4 hours on high or 6-8 hours on low OR in the oven at 350* for 2-3 hours.
Shred chicken (if you prefer) or leave it in big pieces
Serve over rice
Or in tacos
Or in strawhats
Or as a chip dip...
Garnish with lettuce, tomatoes, cheese, olives... ect.
Options are {almost} endless, but make lots because it's great as leftovers! And another score--- it's Gluten Free!!

Here's a fantastic recipe for it...
Oven Rice Recipe
2 3/4 cups parboiled rice
1 stick butter
Salt & Pepper
6 cups of water (or chicken broth for more flavor)
Put all in 9x13 and cover with foil. Bake at 350* for 1 hour.

THANKS for sharing this recipe!! I can't wait to taste it! Currently it's cooking in my crock pot now for supper! :) It was perfect timing to see your post because I had chicken thawed to have for supper but no ideas to make with it yet! :)
